Apple Walnut Salad

Makes 6 servings



2 medium tart apples (such as a Granny Smith) and 1 sweet apple (such as a Gala), unpeeled, cubed (about 3 cups)
2 cups baby spinach
1 cup romaine lettuce, chopped
¼ cup toasted, chopped walnuts
3 Tbsp. blue cheese, crumbled


2 Tbsp. red wine vinegar
1 Tbsp. fresh lemon juice
1 tsp. Dijon mustard
½ tsp. honey
¼ cup olive oil
¼ tsp. salt
¼ tsp. freshly ground black pepper


  1. In a large bowl, toss apples, spinach, romaine lettuce, walnuts and blue cheese to combine.
  2. In a small bowl, whisk together vinegar, lemon juice, mustard and honey. Slowly add oil in a thin stream. Whisk in salt and pepper.
  3. Pour dressing on the salad and gently toss. Place the salad in a serving bowl or 6 individual bowls.
