Lemon-Grilled Chicken Breast
Makes 6 servings
3 Tbsp. fresh lemon juice
2 Tbsp. canola or grape seed oil
2 garlic cloves, minced
6- 3oz. boneless, skinless chicken breast
½ tsp. sea salt
½ -3/4 tsp. freshly ground black pepper
- Prepare grill (medium-high heat).
- Combine first four ingredients in a large zip lock plastic bag and seal. Marinate for 30 minutes in the refrigerator, turning bag at 15 minutes. Remove chicken from the bag and discard the marinade. Place salt and pepper in a small bowl and stir to mix. Evenly distribute the salt and pepper blend onto the chicken breasts.
- Coat grill rack with cooking spray then place chicken on rack. Grill 6 minutes on each side or until done.
