Roasted Succotash

Makes 6 servings


10 oz. package frozen lima beans
1 ½ cups fresh or frozen whole kernel corn
1 ½ cups chopped red sweet pepper
1 cup chopped onion (white or yellow onion)
1 Tbsp. olive oil
1 tsp. cumin
½ tsp. salt
1/8 to ¼ tsp. ground red pepper
1-2 Tbsp. chopped cilantro


  1. In a 15x10x1 inch baking pan, combine all ingredients except cilantro.
  2. Bake in a 400-degree oven for 25 minutes or until vegetables are tender and lightly browned, stirring every 10 minutes. When ready to serve, sprinkle with cilantro.
